The yemeni  Khobz Altawa
Ingredients :
1- You can use plain white flour alone or you can use whole wheat flour alone but usually we use equal quantities of both of them.
2-pinch of salt
3- A tea spoon of powder milk or a tea spoon of yogurt (optional)
4- Pinch of sugar (optional)
NO packing powder and NO yeast
Instructions :
Combine the flour with salt and add the water gradually.  Stir vigorously until combined into a smooth batter. It will look like non sticky, thick dough. Scrape down the sides and loosely cover the container with plastic wrap and let sit for 30 minutes at room temperature. Then we cut the dough into small round pieces and then flatten each small round piece into a rectangular shape with a rolling pin.  Put a little oil alone or you can combine margarine and oil in a container and put some of them on the rectangular shaped dough. Roll up the dough either in spiral or rectangular shapes. Then you flatten it again into a rectangular shape with a rolling pin. Heat a pan on a medium flame and put the rolled out dough on it and sprinkle a bit of oil on it.
